Slow Cooker Mississippi Chicken

Mississippi pot roast is one of my absolute favorite dinners! I usually make it about once a month and everyone loves it! I decided to switch things up a bit and try it out with chicken. It did not disappoint! The chicken turned out so flavorful and just fell apart when it was finished cooking. Plus it’s an easy Crockpot recipe, which is always a winner in my book!

Other than altering a couple of the measurements, the ingredients are pretty much identical to my pot roast recipe. You will need chicken breast, ranch seasoning, a packet of au jus gravy mix, butter and pepperoncini peppers. I don’t use the ranch seasonings packets. The ingredients aren’t the cleanest and it adds quite a few extra carbs. I make my own seasoning blend, which is included in the recipe card below.

I just throw all of the ingredients into the Crockpot and let it cook for about 6 hours on low. Once it’s finished, I shred the chicken with two forks and serve. The chicken will fall apart and soaks up all the delicious juices. For sides, I like serving it with mashed cauliflower. I do fit carrots into my diet and they make the perfect addition as well. You could also serve it along with roasted broccoli, green beans, asparagus or even cauliflower rice. There are tons of easy options! Slow Cooker Mississippi Chicken

Ingredients

  • 4 boneless, skinless chicken breast, (about 2.25 lbs)
  • 1/4 cup pepperoncini pepper juice
  • 1 batch ranch seasoning, see recipe below
  • 1 packet au jus gravy mix
  • 1/4 cup (4 Tbsp) butter, cut into slices
  • 6-8 pepperoncini peppers

Ranch Seasoning:

  • 1.5 tsp dried parsley
  • 1 tsp dried chives
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried dill
  • 1/2 tsp black pepper
  • Pinch salt

Method

  • 1)

    Mix ranch seasoning together in a small bowl. Place chicken breast into bottom of slow cooker. Top with pepperoncini pepper juice, ranch seasoning, au jus packet, butter and peppers.

    Cook on low for 6 hours, or until chicken easily shreds. Shred chicken in juices and serve with mashed cauliflower or your favorite side.
