This casserole is a staple in my household. I love eggs, but need a little something different than my usual scrambled ones from time to time. I love making this on a Sunday and having it on hand for the rest of the week for a quick, delicious breakfast. Add in cooked bacon or your favorite low carb veggies to make it your own.
