Low Carb Sausage & Cheese Breakfast Casserole

This casserole is a staple in my household. I love eggs, but need a little something different than my usual scrambled ones from time to time. I love making this on a Sunday and having it on hand for the rest of the week for a quick, delicious breakfast. Add in cooked bacon or your favorite low carb veggies to make it your own. I hope you enjoy it as much as I do!

Low Carb Sausage & Cheese Breakfast Casserole

  • Prep time: 15 minutes
  • Cook time: 35 minutes
  • Serves: 6

Ingredients

  • 6 large eggs
  • 1/2 pound ground pork sausage
  • 1.5 cups shredded mild cheddar cheese
  • 1/4 tsp each of salt & pepper
  • 1/8 tsp garlic powder
  • Pinch red pepper flakes, optional
  • Splash heavy whipping cream

Method

  • 1)
    Preheat oven to 350 and spray a 9″ pie pan or 8″ baking dish with non-stick cooking spray.
  • 2)

    Brown ground sausage until fully cooked & drain.

  • 3)

    Whisk together eggs, heavy whipping cream and seasonings; add in shredded cheese and stir together.

  • 4)

    Stir in cooked ground sausage and pour mixture into pan.

  • 5)

    Bake for 35-40 minutes until golden and casserole is set.
