Simple Keto Roasted Broccoli

Hey everyone! Hope you’re doing well! I was going to take a break from blogging until everything that is going on in the world calms down, but decided to do something different. I’m not going to create any new recipes until after things get back to normal. Instead, I will share some super easy ones that I have made since starting my keto journey that aren’t already on the blog. I have a couple of side ideas in mind or might share some easy baked goods.

I paired this roasted broccoli with a chicken recipe that I made the other night. It’s so simple, but we love it as an easy side option. I thought it would be a good one to share, because sometimes I forget about it. I made this in the oven the other night, but it’s also great in the air fryer! The next time I make it, I will use the air fryer and update the recipe card with that method.

For this recipe you will need: broccoli florets, olive oil and some simple seasonings. My favorite ones that I always keep on hand that pair well with roasted broccoli are garlic powder, dried thyme, onion powder, salt and black pepper. I also like adding in some crushed red pepper flakes. You just toss everything together and roast it for about 20 minutes. Sometimes I garnish it with some grated parmesan cheese or a squeeze of fresh lemon juice. I hope you enjoy this easy side option!

Simple Keto Roasted Broccoli

  • Prep time: 10 minutes
  • Cook time: 23 minutes

Ingredients

  • 4 cups fresh broccoli florets
  • 1.5 Tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp dried thyme
  • 1/4 tsp onion powder
  • 1/4 tsp salt, or to taste
  • 1/4 tsp black pepper
  • Pinch red pepper flakes, optional

Method

  • 1)

    Preheat oven to 425 degrees F. Grease a large baking sheet and set aside.

  • 2)

    Add broccoli florets and olive oil into a large bowl. Toss to coat broccoli thoroughly with oil. Add seasonings and toss to combine.

  • 3)

    Place broccoli onto baking sheet and spread evenly across pan. Bake for 20-23 minutes, or until slightly browned and crispy around the edges. Garnish with grated parmesan cheese or fresh lemon juice, if desired.
