I don’t think I’ve ever done two blog post in the same week. Not that I can remember at least. I shared a pumpkin muffin recipe a couple of days ago and made this soup the same day. It turned out so yummy! I snapped some photos and decided not to wait until next week to share the recipe. It’s a slow cooker recipe, which really comes in handy during this time of the year. I’ve mentioned before that I think I prefer the slow cooker over the Instant Pot. I like being able to dump everything in the pot and let it cook all day. I do use my Instant Pot on a regular basis though!
I’m obsessed with soups and chili! I have several on my blog that you can find here and have some good new ones going in my e-cookbook that I’m releasing in a few weeks. I can’t wait! The most popular one on my blog is Low Carb Chili, but I also love the Taco Soup and Tomato Soup! I’ve actually had this stuffed pepper soup planned for several weeks but just now got around to making it. It turned out perfect on the first attempt! My non-keto husband enjoyed it as well. When he took a bite he said “this really does taste like a stuffed pepper!”
This soup has all of the same ingredients as a regular stuffed pepper: ground beef, peppers, onion, diced tomatoes, tomato sauce, seasonings and I used cauliflower rice as a rice substitution. I promise you can’t taste the cauliflower at all. The other flavors help mask that flavor. Just add everything in your slow cooker (except for the cauliflower rice) and dinner will be waiting for you at the end of the day. I added the cauli rice during the last 30 minutes of cooking and it turned out great! We topped our soup with shredded mozzarella cheese and it was perfect! If you give any of my soups a try, I hope you love them!
