Low Carb Sloppy Joe Stuffed Peppers

I love sloppy joes! Prior to keto, I would make them at least a couple of times of month. The canned manwich ingredients are far from clean, so I’m glad I was able to make a homemade, low carb version of it that taste just as delicious. Like all of my recipes, it’s approved by non-keto family members who have always used the canned sauce!

I put sloppy joes on the menu for dinner last week but realized I was out of the low carb flatbreads that I always put them on. I considered using lettuce wraps, but that didn’t sound appealing at the time. Stuffed peppers came to mind so I decided to try that. They turned out perfect and were so easy to make! 

You can use any color of bell pepper that you like, my favorites are green and red. Orange and yellow would be delicious as well. If you’re not a bell pepper person, you can pair my sloppy joe recipe with your favorite low carb tortilla, on lettuce wraps or on low carb buns. I hope you all enjoy!

Low Carb Sloppy Joe Stuffed Peppers

  • Prep time: 15 minutes
  • Cook time: 30 minutes
  • Serves: 6

Ingredients

  • 3 bell peppers, in color of choice
  • 1/2 cup shredded mozzarella cheese

Sloppy Joe Mixture:

  • 1 lb ground beef
  • 1/2 green bell pepper, chopped
  • 2 garlic cloves, minced
  • 1 cup tomato sauce
  • 1/4 cup + 2 Tbsp sugar free ketchup
  • 1/2 Tbsp soy sauce
  • 2 tsp yellow mustard
  • 1/2 tsp onion powder
  • 1/2 tsp chili powder
  • 1/4 tsp each of salt & pepper
  • Pinch of cayenne pepper

Method

  • 1)

    Cut bell peppers in half lengthwise and remove membranes/seeds. Place in baking dish or on sheet pan and set aside. Preheat oven to 400 degrees.

  • 2)

    Prepare sloppy joe mixture. Directions here.

  • 3)

    While sloppy joe mixture is simmering, place peppers in oven and bake for 18-20 minutes.

  • 4)

    Remove from oven and spoon sloppy joe mixture into peppers.

  • 5)

    Top with cheese and bake for 8-10 minutes, until cheese is melted.
