Chicken fajitas are one my favorite meals! I love making them at home and ordering them at my favorite local Mexican restaurant when we dine out. I have a skillet fajita recipe here on the blog already, but decided to make a sheet pan version since I’ve been so busy lately. This recipe couldn’t be any easier to throw together and that’s exactly what I need right now! I also like making fajitas when I have company since it’s something everyone can enjoy, keto or not. Just serve them with all of the yummy garnishes and tortillas and everyone will be happy.
For this recipe you will need bell peppers, onion, chicken breast, lime juice, olive oil and some seasonings. I included a homemade seasoning blend below that is so flavorful! After you get everything sliced, just mix everything together in a bowl or right on the sheet pan, then bake. Chopping does take a little time, but other than that, it’s just toss and bake.
Don’t forget about all the toppings and garnishes! I like serving them with guacamole, avocado slices, lime wedges, shredded cheese, sour cream, salsa, cilantro and lettuce. There are lots of low carb tortilla options out there, my favorite being Cutdacarb. Sometimes I’ll make a side of Mexican cauliflower rice (the recipe will be in my E-Cookbook) and make a fajita bowl. That’s my favorite way to eat them! You could also do lettuce wraps, but I find them to be messy. Delicious, but messy. I like making these on “Taco Tuesdays” but whatever day you choose to make them, I hope you love them!
