Low Carb Pizza Soup

I am so excited about fall and love getting to make yummy soups again! I already have a Low Carb Chili and Enchilada Soup recipe up on the blog and have some other ideas I can’t wait to try out! Soups are my favorite- they are warm, flavorful and so easy to throw together. My Instant Pot and Crock-Pot are lifesavers! This is a crockpot or stove top recipe that only requires basic ingredients and is full of flavor!

I added toppings that I enjoy on a regular pizza into this soup: pepperoni, sausage, onion, pepper, and mushrooms. The good thing about this recipe is that you can customize the ingredients to your liking. It’s great topped with mozzarella cheese and extra pepperoni as well. I hope you enjoy!

Low Carb Pizza Soup

  • Prep time: 20 minutes
  • Cook time: 6 hours
  • Serves: 6

Ingredients

  • 1/2 lb ground Italian sausage
  • 1/2 medium onion , chopped
  • 1 small green bell pepper, chopped
  • 1/2 cup (56g) pepperoni, halved
  • 3 cups beef broth
  • 1 cup sliced mushrooms, optional
  • 3/4 cup tomato sauce
  • 1/2 cup pizza sauce, I use Rao's
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/4 tsp salt

Method

CrockPot:

  • 1)

    Add ground sausage to skillet and break apart with spatula. Cook over medium high heat until no longer pink and cooked through. Drain excess grease.

  • 2)

    Pour sausage into crockpot and add chopped onion, pepper and pepperoni to skillet. Saute until veggies are tender.

  • 3)

    Add all ingredients to crockpot and stir together.

  • 4)

    Cook on low for 6 hours or high for 3 hours. Top with shredded mozzarella cheese and extra pepperoni, if desired.

Stove Top:

  • 1)

    Add ground sausage to skillet and break apart with spatula. Cook over medium high heat until no longer pink and cooked through. Drain excess grease and set aside.

  • 2)

    Add chopped onion, pepper, pepperoni and sliced mushrooms to skillet. Saute until veggies are tender.

  • 3)

    Transfer all ingredients into a large pot and stir. Bring to a gentle boil, then simmer for 15 minutes, stirring occasionally. Serve hot.
