Low Carb Pecan Waffles

I share a lot of dinner recipes, but have very few breakfast ones here on the blog. I’ve been working on this waffle recipe for a while now. I’ve made them so many times that I’ve lost count. I finally perfected the recipe and am so happy with how they turned out! The taste and texture are both on point! Pecan waffles were my favorite pre-keto, which is why I was so determined to nail this recipe.

The ingredients are all pretty basic except for the brown sugar substitute. I use the Swerve brand that I ordered from Amazon. Other than that, it’s just almond flour, sweetener, butter, eggs, vanilla, cinnamon, baking powder and pecans. Feel free to adjust the amount of pecans to your liking. I tried a ½ of cup a few times but personally think a ¼ of a cup is plenty. It’s really just personal preference. Since these waffles are super filling, I made the serving size half of a waffle. The batter is enough for three nice sized waffles. I like garnishing mine with pecans, sugar free maple syrup and serving them with a side of bacon or sausage.

Low Carb Pecan Waffles

  • Prep time: 5 minutes
  • Cook time: 5 minutes
  • Serves: 3 waffles (Serving size: 1/2 waffle)

  • 1 cup superfine almond flour
  • 2 Tbsp powdered sweetener, I use Swerve
  • 1 Tbsp brown sugar substitute, I use Swerve
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 3 Tbsp butter, melted
  • 1 tsp vanilla extract
  • 3/4 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/4 cup pecans, chopped


  • 1)

    Preheat waffle iron to medium-high. My iron has a 1-5 setting and I set it to a 4.

    Whisk all ingredients together in a large bowl, except for pecans. Once mixed, fold in pecans.

  • 3)

    Cook each waffle until golden brown. Place cooked waffles on a wire rack while other waffles are cooking. Garnish with chopped pecans and serve with your favorite sugar free syrup.
