Low Carb Jalapeno Popper Dip

I can’t believe that it’s almost 2019! I started this blog in June and can’t believe how fast the time has went by! I have enjoyed blogging SO much and can’t wait to continue creating new recipes next year! 

I was making a list of some low carb dishes to make for New Year’s Eve. I’ll definitely be putting together another Charcuterie Board and maybe even make a pot of chili. If you haven’t seen those post, you can find the one for the Charcuterie Board here and the recipe for the chili here.

Dips are something that everyone can enjoy, so I decided to create this Jalapeno Popper Dip. I kept it really basic, but it turned out SO good! Since I’m keto, I will serve mine with low carb dippers. I like pork rinds, cheese crisp, celery sticks, cucumber slices and sliced bell peppers. I do eat carrots occasionally when I’m able to fit them into my carb allowance. They are really good with dips like this. I also like taking low carb flatbreads, cutting them into “chip” shapes and baking them. They make the perfect dipper! For my non-keto family members, I’ll set out crackers, pita chips and tortilla chips.

Low Carb Jalapeno Popper Dip

  • Prep time: 10 minutes
  • Cook time: 15 minutes

Ingredients

  • 8 ounces cream cheese, softened
  • 3/4 cup sour cream
  • 2-3 jalapenos deseeded & finely chopped
  • 8 slices bacon, cooked & chopped
  • 1/4 cup chopped green onions
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika, optional
  • Pinch salt & pepper
  • 1 & 1/4 cup shredded cheddar cheese, divided
  • 1/2 cup shredded pepper jack cheese
  • Jalapeno slices for topping, optional

Method

  • 1)

    Preheat oven to 350 degrees.

  • 2)

    In a large mixing bowl, stir together cream cheese, sour cream, chopped jalapenos, green onions, seasonings, half of the chopped bacon, 1/2 cup pepper jack cheese and 1/2 cup cheddar cheese. Stir until well combined and spread mixture evenly into a small cast iron skillet or shallow baking dish.

    Top with remaining 3/4 cup cheddar, chopped bacon and jalapeno slices.

    Bake for 15-20 minutes, until cheese is melted and bubbly.
