Low Carb Jalapeno Popper Chicken

Since chicken is one of my favorite foods, I’m always trying to create new chicken dish recipes. I have a Jalapeno Popper Dip recipe here on the blog and used that as my inspiration for this recipe. I used pretty simple ingredients for the chicken topping: cream cheese, jalapenos (of course), sour cream, bacon and cheese. It turned out fantastic!

I baked it in the oven, so you only have to dirty up one pan and a bowl to stir together the topping mixture. The first time I made the recipe, I cooked and chopped my own bacon. I made it a second time just to make a couple of changes and didn’t have enough bacon on hand. I ended up using bagged crumbles from Costco. Either one will work, but I prefer making my own. The bacon crumbles are one of my Costco staple items for situations like this or when I’m short on time.

Both times I made this, I served it with low carb veggies. Green beans are a good option as well as a simple side salad. Cauliflower mash would be delicious too! If you give this chicken a try, I hope you enjoy!

Low Carb Jalapeno Popper Chicken

  • Prep time: 10 minutes
  • Cook time: 35 minutes
  • Serves: 3
  • Calories 537.1


  • 3 boneless, skinless chicken breast
  • 4 oz cream cheese, softened
  • 1.5 Tbsp sour cream
  • 1/4 tsp garlic powder
  • 1/8 tsp onion powder
  • Pinch of salt & pepper
  • 6 slices cooked & crumbled bacon, divided
  • 2 jalapenos de-seeded & diced
  • 2 Tbsp parmesan cheese
  • 3/4 cup shredded cheddar cheese, divided


  • 1)

    Preheat oven to 400.

  • 2)

    Season chicken with salt & pepper and bake for 20 minutes.

  • 3)

    While chicken is cooking, mix together: cream cheese, sour cream, seasonings, half of chopped bacon, diced jalapenos, parmesan cheese and ¼ cup cheddar.

  • 4)

    After chicken has cooked for 20 minutes, top with cream cheese mixture. Top with remaining cheddar cheese and chopped bacon.

    Bake for 10-15 more minutes, until cooked through.
