I had never tried ham salad until I started dating my husband 8 years ago. I remember going to Iceland to visit his family for the first time and having it. It’s so good and easy to make! I’ve watched my mother-in-law make it often and decided to make my own version of hers. We were in Iceland last December and she made a huge batch for a New Years Eve appetizer and I made a mental note then to put it on the blog. So here it is, almost eight months later!
For this recipe you will need: diced ham, hard boiled eggs, mayo, chives, relish, mustard and seasonings. It’s super easy to make and is pretty similar to my Egg Salad recipe. I use a packaged deli style ham from Kroger. I just read the labels and look for the one with the lowest carb count. If you’re strict about ingredients, take that into consideration as well. There are some clean options out there though. Just mix everything together, let it chill in the fridge and you have an easy lunch option for the week.
My husband likes having ham salad with Ritz crackers (he doesn’t follow keto), but there are several low carb alternatives out there. I like serving it on a low carb tortilla or flatbread, such as Cutdacarb, Outer Aisle cauliflower sandwich thins, crispbread from Trader Joes or using it has a dip with pork rinds. Cheese crisp are terrific with this as well. I hope you enjoy!
