Low Carb Chicken Parmesan Skillet

I love simple skillet meals! They are quick, easy and clean up is a breeze! I actually threw this skillet together one night when I had my regular chicken parmesan on the menu. When I started gathering my ingredients, I realized I didn’t have a couple of the main ones on hand. I still wanted chicken parm and this is how this skillet was created. It turned out so good!

My regular chicken parmesan recipe has a crust that’s made out of crushed pork rinds and seasonings. Pork rinds was one of the ingredients I didn’t have, so the chicken in this skillet doesn’t have a crust. But it does have LOTS of cheese and the sauce is so flavorful! Enjoy!

Low Carb Chicken Parmesan Skillet

  • Prep time: 5 minutes

Ingredients

Chicken:

  • 3-4 boneless, skinless chicken breast, pounded thin
  • Salt
  • Black pepper
  • Garlic powder
  • Italian seasoning

Skillet:

  • 3 Tbsp olive oil, divided
  • 1/2 small onion, chopped
  • 2 garlic cloves, minced
  • 2 cups low carb marinara sauce
  • 1/4 cup parmesan cheese, grated
  • 1 tsp Italian seasoning
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes, optional
  • Pinch salt
  • 1/2 cup mozzarella cheese, shredded

Method

  • 1)

    Season chicken breast with salt, pepper, garlic powder and Italian seasoning.Β  Heat 2 Tbsp olive oil in large skillet over medium-high heat.

  • 2)

    Add chicken to skillet and cook on both sides until golden brown and cooked through. Set aside on plate and cover with foil to keep warm.

  • 3)

    Add 1 more Tbsp of olive oil to skillet. Add onion and garlic and saute until tender.

  • 4)

    Add all remaining ingredients to skillet (except for mozzarella cheese). Stir together and simmer for 7-10 minutes, until sauce is slightly thickened.

  • 5)

    Add chicken back to skillet and top with mozzarella cheese. Cover with lid until cheese is melted.
