Low Carb Chicken Parmesan Skillet

I love simple skillet meals! They are quick, easy and clean up is a breeze! I actually threw this skillet together one night when I had my regular chicken parmesan on the menu. When I started gathering my ingredients, I realized I didn’t have a couple of the main ones on hand. I still wanted chicken parm and this is how this skillet was created. It turned out so good and was super easy to make!

My regular chicken parmesan recipe has a crust that’s made out of crushed pork rinds and seasonings. Pork rinds was one of the ingredients I didn’t have, so the chicken in this skillet doesn’t have a crust. But it does have LOTS of cheese and the sauce is so flavorful! Enjoy!

Low Carb Chicken Parmesan Skillet

Ingredients

Chicken:

  • 2 large boneless, skinless chicken breast
  • 1 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp paprika

Skillet:

  • 3 Tbsp olive oil, divided
  • 1/2 small onion, chopped
  • 2 garlic cloves, minced
  • 2 cups low carb marinara sauce
  • 1/4 cup parmesan cheese, grated
  • 1 tsp Italian seasoning
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes, optional
  • Pinch salt
  • 4 slices mozzarella cheese

Method

  • 1)

    In a small bowl, mix together chicken seasonings until combined. Slice the two chicken breast in half lengthwise to form 4 cutlets. Season chicken with seasoning blend.

  • 2)

    Heat 2 Tbsp olive oil in a large, oven safe skillet over medium-high heat. Add chicken to skillet and cook on both sides until golden brown and cooked through. Set aside on plate and cover with foil to keep warm.

  • 3)

    Add remaining Tbsp of olive oil to skillet. Add onion and garlic and saute until tender.

  • 4)

    Add all remaining ingredients to skillet (except for mozzarella cheese). Stir together and simmer for 7-10 minutes, until sauce is heated through and slightly reduced.

  • 5)

    Add chicken back to skillet and top with mozzarella cheese slices. Place under broiler until cheese is melted and bubbly.Β  Garnish with parsley and red pepper flakes, if desired. Serve hot.
