I made this Loaded Cauliflower Bake for Thanksgiving and my family raved about it! None of them follow keto, so I was surprised that they enjoyed it so much! There are several recipe variations out there for Cauliflower Casseroles. Some of them are in a mashed form and some just use the florets. They all use cheese and bacon, which are the most important ingredients in my opinion!
For Thanksgiving, I planned on making this casserole recipe that I had used in the past from keto karma. I didn’t have the cauliflower florets chopped or boiled yet and I was running super tight on time. I ended up throwing together my own version of it, inspired by her recipe. I microwaved a couple of bags of frozen cauliflower rice, mixed together some cream cheese and sour cream with a few spices and bacon. Luckily, I had cooked lots of bacon the night before.
It ended up turning out SO good and I liked how the casserole held together with the riced cauliflower. The flavor was spot on too. I didn’t measure anything when I made it and decided to recreate it so I could share the exact measurements with you all. It makes the perfect weekly dinner side dish and is perfect for the holidays as well! I hope you enjoy!
