Low Carb Beef Enchiladas

Mexican inspired food is a favorite in my house and is pretty simple to make low carb! I have several Keto Mexican recipes here that we make on a regular basis. I really wanted enchiladas last week and decided to make a simple beef version. The ingredients are very basic, but they turned out great and were so easy to make!

Here’s what you need to make my beef enchilada recipe: ground beef, onion, taco seasoning, salsa, enchilada sauce, low carb tortillas and shredded cheese. I have a homemade taco seasoning that I will link below. It has clean, simple ingredients and even tastes better than the packaged ones. I use this brand of enchilada sauce. I usually find it at Walmart or Kroger. As far as low carb tortillas, I prefer the Mission or the La Banderita brands. I will link both in my Amazon favorites at the bottom of this post. There are tons of brands to choose from that are widely available at most grocery stores nowadays.Β 

You can’t have enchiladas without all the garnishes. Our favorites are salsa, sour cream, guacamole, avocado slices and sliced green onions. Black olives, chopped tomatoes or cilantro would be great as well. I hope you enjoy these enchiladas as much as we did! They make the perfect weeknight dinner and are great leftover as well!

Low Carb Beef Enchiladas

  • Prep time: 20 minutes
  • Cook time: 20 minutes
  • Total time: 40 minutes
  • Serves: 6 (Serving Size: 1 enchilada)

Ingredients

  • 1 lb ground beef
  • 1/2 small onion, chopped
  • 2 Tbsp taco seasoning
  • 1/2 cup salsa
  • 1/4 cup water
  • 10 oz can enchilada sauce, divided
  • 6 large low carb tortillas
  • 2 cups shredded Mexican blend cheese, divided

Method

  • 1)

    Preheat oven to 350 degrees F. Spray a large baking pan with non-stick cooking spray.

  • 2)

    Add ground beef to a large skillet and break apart with spatula. Once beef begins to brown, add chopped onion. Saute until no longer pink and cooked through. Drain excess grease.

  • 3)

    To the cooked beef, add taco seasoning, salsa and water. Stir together and heat through.

  • 4)

    Assemble enchiladas: Spread 1.5 Tbsp enchilada sauce onto bottom of each tortilla. Evenly divide beef mixture between tortillas, then sprinkle with shredded cheese (about a Tbsp each). Roll up and place seam side down into pan.

    Once assembled, spoon remaining enchilada sauce over top of tortillas and top with remaining cheese. Bake uncovered for 20 minutes. Serve with your favorite garnishes.
