I love using my slow cooker all year round, but especially in the summer! I’ve had this whole chicken recipe typed up for a while now and decided to make it for dinner yesterday. It smelled fantastic cooking, so I snapped some pictures of it when it was done. I’m so glad that I did because it turned out so yummy and was a breeze to make! It was so flavorful and tender! There were also plenty of leftovers for dinner the next day, which is always nice.
For the recipe, I used a 5 pound whole chicken. I wiped it dry with some paper towels, then coated it in some olive oil and a seasoning blend. I lined the bottom of my crockpot with a few aluminum foil balls and onion wedges, to create a “rack” for the chicken. This prevents the chicken from cooking in the juices that form in the bottom of the slow cooker. You can cook the chicken on either high or low, I included directions for both on the recipe card below.
I like the skin crispy, so I transferred the cooked chicken into a large cast iron skillet. I broiled it on high for about 5 minutes and it was perfect!
For sides, I served the chicken with some homemade Broccoli Salad from my E-Cookbook, as well as some deviled eggs. Side possibilities are endless though. Some of my go-to’s are green beans, roasted broccoli, cauliflower mash or asparagus. If you give this chicken recipe a try, I would love to know how you like it. Enjoy!
