I have a Shredded Buffalo Chicken recipe that my entire family loves! Anytime I have visitors, it’s a recipe that I always make and everyone enjoys. It’s a busy season of life for me, so I appreciate easy recipes more than ever! The Instant Pot and slow cooker are lifesavers for me right now, so I decided to come up with another simple recipe using those. Since my buffalo chicken is something everyone loves, I decided to come up with a BBQ chicken version of that. I came up with a simple spice blend and used sugar free BBQ sauce for the recipe. It came out fantastic and couldn’t be any easier to make!
For the spice blend I used spices that I always keep on hand: chili powder, paprika, garlic powder, onion powder, ground mustard, salt and pepper. I also used a little brown sugar substitute since it always pairs well with BBQ recipes. I have a homemade BBQ sauce that’s going in my e-cookbook. It’s super tasty and I am proud of how it turned out! For this chicken, you can use your favorite homemade or bottled sugar free BBQ sauce. I really like the G. Hughes brand and always keep a couple of bottles in my pantry.
I always like to include side options in my recipes. I love serving anything BBQ related with coleslaw. You can find my homemade coleslaw recipe here. It’s so easy to make and I’ve gotten a lot of positive feedback on it! I also recommend your favorite low carb veggies or a side salad. I served mine on top of my favorite cauliflower sandwich thins from Outer Aisle Gourmet. I can’t find them locally, so I order them online. They are a little pricey, but worth it to me. They also make great cauliflower pizza crust with clean ingredients.
