I’ve been meaning to share this recipe on the blog for quite a while now, but haven’t had the chance to take pictures. I wanted them for lunch the other day, so fried a batch up for my husband and I. It was a sunny day, so I used the opportunity to take photos so I could share them with you all. My mom used to make salmon patties all the time when I was growing up and I really wanted to perfect a keto version of them. I’m not much of a seafood person, but do love salmon. Anytime I make these, I’m transported back to her kitchen, so I would say they’re a winner.
My mom uses flour and cornmeal in her salmon patties, along with a few spices. I simply used almond flour, some parmesan cheese and spiced them up well. Side note: I often get asked what almond flour brand I prefer. I always use the Kirkland superfine almond flour from Costco. I’ve tried a lot of brands and this one is my favorite. They get super crispy and you wouldn’t even know they are a healthier version of the real thing. I made my patties a little on the smaller side and got 12 patties out of the mixture. Feel free to make them larger, if you prefer. I think this size was perfect for dipping them in the homemade tartar sauce I made.
Anytime I make sauces, it usually takes me several tries to get it right. I worked with this one and was able to get it to my liking on the second try. I think it complimented the salmon very well. The tartar sauce is simply just mayo, diced pickles, pickle juice, lemon juice, chives and some spices. It turned out super tasty and is much cleaner than the bottled stuff you buy at the grocery store! If you’re a salmon lover or are missing salmon patties, give these a try!
