Keto Pepperoni Pizza Chicken Skillet

I wanted something different for dinner last week and came up with this Pepperoni Pizza Chicken Skillet. It’s one of my new favorites! I say that about a lot of things, but I really loved this! It was super tasty and so easy to make! My husband (who doesn’t follow keto) gave it two thumbs up, so I knew I had to share it on the blog. It’s something that the entire family can enjoy, regardless if they follow keto.

I always try to keep my recipes as basic as possible ingredient wise and this skillet is no exception. Even though the ingredients are simple, it’s still full of flavor!  All you will need to make this skillet is chicken breast, marinara sauce, cheese, pepperoni and some seasonings. That’s it! I use the Rao’s brand of marinara sauce. It has clean ingredients, tastes delicious and is only 4 carbs per serving. It can be pricy, so I always stock up when it’s on sale. My local Costco finally started carrying it, so if you’re a member, definitely check there. It’s by far the cheapest I’ve found.

I get asked a lot about side dishes. With this skillet, I think side salads pair best with it. Keto Pepperoni Pizza Chicken Skillet

  • Prep time: 5 minutes
  • Cook time: 15 minutes

Ingredients

Chicken:

  • 2 large boneless, skinless chicken breast (about 1.5 lbs)
  • 1/2 tsp garlic powder
  • 1/4 tsp oregano
  • 1/4 tsp each salt & black pepper

Skillet:

  • 2-3 Tbsp olive oil
  • 2 cups marinara sauce, I use Rao's
  • 5 slices mozzarella cheese
  • 12 (1 oz) pepperoni slices
  • 1/2 tsp Italian seasoning
  • 1/4 tsp garlic powder
  • Pinch red pepper flakes
  • Basil, for garnish

Method

  • 1)

    Cut each chicken breast in half lengthwise to make 4 cutlets. In a small bowl, mix together garlic powder, oregano, salt and pepper. Season chicken with seasoning.

  • 2)

    Heat oil in large oven safe skillet over medium heat. Cook chicken on both sides until golden and cooked through. Set aside on a plate and cover with aluminum foil to keep warm. Carefully wipe excess grease from skillet using a paper towel.

  • 3)

    Add marinara sauce, Italian seasoning, garlic powder and red pepper flakes to skillet. Stir and simmer for 7 minutes, stirring occasionally until heated through.

  • 4)

    Add chicken back into skillet. Top with mozzarella cheese and pepperoni. Place under broiler until cheese is melted and browned. Garnish with basil, extra Italian seasoning and red pepper flakes, if desired.
