Keto chicken nuggets! I’ve made these a few times since starting keto and love them! I’ve never measured anything in the past and have just eyeballed the ingredients. I wanted to share them with you all and took notes on how I made them the other night.
They’re actually super easy to make and you only need basic ingredients: ground chicken, crushed pork rinds, parmesan cheese and lots of spices. You simply mix together the chicken mixture and the crust ingredients and you’re ready to form your nuggets.
I’m sure these would be good pan fried or even made in the air fryer, but I chose to bake mine for simplicity. One tip, use a baking sheet lined with a wire rack. I tried it both with a wire rack and on a baking sheet lined with aluminum foil and they turned out MUCH better on the rack. Next time I make them I’ll probably put half of them into the air fryer to test that method out.
I wanted to include information about the sauces I use. I’ve used the G. Hughes brand of BBQ sauce and ketchup for a long time. The BBQ sauce contains 2 carbs per serving and the ketchup only has 1 carb, so you can’t beat that. They recently came out with a new line of sauces that includes honey mustard! Honey mustard was my favorite pre-keto so I was excited to try it! Honestly, it’s SO good and is my new favorite sauce from his line of products. The honey mustard contains 1 carb per serving.
