Keto Jalapeno Popper Chicken

This recipe has been on the blog since early 2019. It’s one I had kinda forgotten about to be honest. I decided to make some modifications so the recipe would be even tastier than before. I’m so glad that I did because it turned out super delicious! If you are a jalapeno popper fan, you should definitely put this on your dinner menu soon!

For this recipe, I used chicken breast, cream cheese, sour cream, some basic seasonings, grated parmesan cheese, jalapenos, shredded cheese and bacon. I made it casserole style and baked it in the oven until the cheese was melted and bubbly. I’m a huge casserole fan, especially in the fall and winter months and this will be a regular on my dinner rotation for sure!

I actually didn’t make any sides to go with this, but there are tons of options. As usual, I always suggest low carb veggies or a side salad. Green beans, cauliflower rice or cauliflower mash are my go-to’s. Keto Jalapeno Popper Chicken

Ingredients

  • 2 lbs boneless, skinless chicken breast, cubed
  • Salt & black pepper, to season chicken
  • 8 oz cream cheese, softened to room temperature
  • 1/4 cup sour cream
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp onion powder
  • 1/8 tsp black pepper
  • 1/4 cup grated parmesan cheese
  • 3 jalapenos, deseeded & diced, divided
  • 4-5 dashes hot sauce, optional
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded monterey jack cheese
  • 6 slices bacon, cooked & crumbled

Method

  • 1)

    Preheat oven to 400 degrees F. Spray a medium sized baking dish with nonstick cooking spray and set aside. 

  • 2)

    Spray a large skillet with nonstick cooking spray and heat over medium-high heat. Lightly season chicken with salt & black pepper. Once pan is heated, saute cubed chicken until cooked through. Transfer to bottom of baking dish.

  • 3)

    In a medium mixing bowl, stir together cream cheese, sour cream, seasonings, parmesan cheese, half of diced jalapenos and hot sauce (if using). Spread mixture over chicken using a rubber spatula.

  • 4)

    Top with shredded cheeses, remaining diced jalapenos and bacon crumbles. Bake for 10-12 minutes, until cheese is melted. Broil for 2-3 minutes, if needed. Allow to set for 5 minutes before serving.
