This recipe has been on the blog since early 2019. It’s one I had kinda forgotten about to be honest. I decided to make some modifications so the recipe would be even tastier than before. I’m so glad that I did because it turned out super delicious! If you are a jalapeno popper fan, you should definitely put this on your dinner menu soon!
For this recipe, I used chicken breast, cream cheese, sour cream, some basic seasonings, grated parmesan cheese, jalapenos, shredded cheese and bacon. I made it casserole style and baked it in the oven until the cheese was melted and bubbly. I’m a huge casserole fan, especially in the fall and winter months and this will be a regular on my dinner rotation for sure!
I actually didn’t make any sides to go with this, but there are tons of options. As usual, I always suggest low carb veggies or a side salad. Green beans, cauliflower rice or cauliflower mash are my go-to’s.
