Keto Creamy Lemon Chicken

I can’t believe this is the first lemon dish I am sharing here on the blog. I love lemon flavored anything and this skillet is one of my new favorites! I don’t like going to the grocery store and buying ingredients that I’m not going to use in anything else, so like most of my other recipes, this one only requires a few basic ingredients. It’s super easy to make and is full of flavor! Plus you only need one skillet! I’ve been working on tons of new recipes since I’ve been back from vacation, so the fewer dishes to wash, the better!

The sauce is just a super simple cream sauce. You will need garlic, lemon juice, chicken broth, heavy cream and some seasonings. Like I said, simple ingredients that you likely already have on hand. Even though it’s easy, it actually took me a few attempts to perfect the sauce. It was good each time but I finally got it exactly to my liking on the third try. Third time’s a charm I suppose. 

I like using chicken tenders, but you can use chicken breast if you prefer. I served it with different side options each time I made it. It’s great served with cauliflower rice, broccoli, asparagus, or green beans. Mashed cauliflower would pair well with it too. So many yummy options! Enjoy!

Keto Creamy Lemon Chicken

  • Prep time: 10 minutes
  • Cook time: 15 minutes

Ingredients

Chicken:

  • 2 Tbsp butter
  • 1.5 lbs chicken tenders
  • 1 Tbsp lemon pepper seasoning, I use Daks

Cream Sauce:

  • 1 Tbsp butter
  • 2 garlic cloves, minced
  • 3/4 cup chicken broth
  • Juice of 1 small lemon, about 2 Tbsp
  • 1/4 tsp lemon pepper seasoning
  • 1/4 tsp dried parsley
  • 1/8 tsp dried basil
  • Large pinch red pepper flakes, optional
  • 1/2 cup heavy cream

Method

  • 1)

    Season chicken tenders with lemon pepper seasoning.

  • 2)

    Melt 2 Tbsp butter in large skillet over medium high heat. Cook chicken on both sides until brown and cooked through. Remove from skillet and set aside on plate. Carefully wipe excess oil from skillet with paper towel, leaving some of the brown bits in pan.

  • 3)

    Melt 1 Tbsp butter over medium heat. Add minced garlic and saute for 1 minute or until fragrant.

  • 4)

    Add chicken broth, lemon juice and seasonings to skillet. Bring to boil, then simmer for 5 minutes.

  • 5)

    Whisk in heavy cream. Bring to a boil then allow to simmer for 5 minutes, or until sauce reduces slightly.

  • 6)

    Place chicken back in skillet. Top with lemon slices or parsley, if desired. Enjoy!
