Keto Chicken Sausage Cauliflower Rice Skillet

I love skillet recipes! They’re easy to make, clean up is a breeze and they are great for meal prep. I had some chicken sausages in the fridge that I needed to use, so I decided to come up with a simple skillet recipe. It turned out to be so tasty and was crazy easy to throw together! 

The ingredients that I used are staple items that I always have on hand. When I planned out the recipe, I didn’t have to go to the store for a single item. You will need your favorite chicken sausages, cauliflower rice, garlic, onion, parmesan cheese and seasonings. Like I said, really basic ingredients. 

I used the Gilbert’s brand chicken sausages that I picked up from Harris Teeter/Kroger. Here’s a link to the ones I bought. They also have a store locator on their website if you want to find them near you. The ingredients are simple, clean and they only contain 1 carb per sausage. I also like the Sam’s Choice brand from Walmart as well as the Aidell’s brand.

Keto Chicken Sausage Cauliflower Rice Skillet

  • Cook time: 15 minutes

Ingredients

  • 1 Tbsp olive oil
  • 10 oz. package fully cooked chicken sausages, cut into rounds
  • 12 oz. bag frozen cauliflower rice, steamed
  • 1/2 small onion , chopped
  • 2 garlic cloves, minced
  • 1/4 cup chicken stock
  • 1 tsp dried parsley
  • 1/2 tsp paprika
  • 1/8 tsp black pepper
  • Pinch salt
  • Pinch red pepper flakes
  • 1/4 cup freshly grated parmesan cheese

Method

  • 1)

    Cook chicken sausages in a large skillet per package directions until browned & slightly crispy. Transfer to a paper towel lined plate and cover with foil to keep warm.

  • 2)

    While sausages are browning, steam cauliflower rice according to package directions. Make sure all water is absorbed.

  • 3)

    Heat olive oil in skillet and add chopped onion. Saute over medium heat until softened. Add garlic and continue to saute until garlic is fragrant, 1-2 minutes. 

  • 4)

    Add in steamed cauliflower rice, chicken stock and seasonings. Stir until cauliflower rice absorbs stock.

  • 5)

    Remove from heat and stir in parmesan cheese. Add cooked sausages back into skillet. Heat through and serve hot.
