I love meatball bakes! They are easy to make, cheesy and super filling! I have two other meatball bakes here on the blog that I will share below if you want to check out those variations. I was craving chicken parmesan for dinner one night, but didn’t have any chicken breast on hand. I always have chicken in the freezer, so I was disappointed that I didn’t have that key ingredient. I did have some ground chicken that I had purchased for another recipe to test, so decided to make chicken meatballs instead. They turned out fantastic and was something new to add to the regular dinner menu.
For the meatballs, I mixed together parmesan cheese, crushed pork rinds, some seasonings and an egg with the ground chicken. I formed the mixture into meatballs and baked them. After they were finished baking, I assembled the casserole and baked it until the cheese was melted and bubbly. This is a super easy dinner recipe and is great re-heated. It ended up being my lunch for the next couple of days. It’s something your non-keto family members will even enjoy. My husband loved it!
I wanted to share a couple of brands that I used for this recipe. My favorite marinara sauce is the Rao’s brand. Most all grocery stores carry it now, but I find it’s cheapest at Costco. This sauce contains 4 net carbs per serving, tastes great and has clean ingredients. I also use the Pork King Good pork rind crumbs that I order from Amazon. You can certainly crush your own, but I love having these for convenience. Other than that, it’s just basic ingredients. Hope you enjoy!
