Keto Chicken Fried Cauliflower Rice & Yum Yum Sauce

I shared this Chicken Fried Cauliflower Rice recipe back in 2018 and it has been a favorite in my house ever since! I decided to update the post since I made a couple of slight changes to the cauliflower rice recipe as well as share my homemade version of Keto Yum Yum Sauce!

For the cauliflower rice, I use the Green Giant Cauliflower Medley from the freezer section. It’s super convenient and really cuts down on the prep time. The ingredients are simple as well-just veggies, which makes it easy to customize to your liking. To the cauliflower rice mixture, I added ground chicken, minced garlic, a couple of seasonings, soy sauce and scrambled eggs. You can’t taste the cauliflower at all and it’s full of flavor!

The keto yum yum sauce takes it to the next level! It’s great on this fried rice as well as on chicken, steak and veggies. It’s a must try! Just store it in an airtight container in the fridge for 7-10 days and enjoy with your favorite foods.

I garnished the finished product with sesame seeds, sliced green onions and drizzled the yum yum sauce on top. A side of broccoli would be great as well! It’s a perfect recipe when you need something quick during the week and is great leftover. I often meal prep it for lunches during the week. 

Here is the packaging for the cauliflower medley that I use for this recipe. It’s located in the freezer section of the grocery store. I find it at Walmart, Publix, Target, and Kroger.

Keto Chicken Fried Cauliflower Rice & Yum Yum Sauce

  • Prep time: 10 minutes
  • Cook time: 15 minutes

Fried Cauliflower Rice:

  • 2 Tbsp sesame oil
  • 1 lb ground chicken
  • 2 (10 oz) bags Green Giant Cauliflower Medley
  • 1.5 tsp minced garlic
  • 1/2 tsp ground ginger
  • 1/4 tsp paprika
  • Pinch red pepper flakes
  • 3 Tbsp soy sauce
  • 3 eggs, scrambled

Yum Yum Sauce:

  • 1 cup mayo
  • 2.5 Tbsp sugar free ketchup, I use G. Hughes
  • 2 tsp rice vinegar
  • 2 tsp sriracha sauce
  • 2 tsp powdered erythritol, I use Swerve
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Pinch salt
  • 1 Tbsp water


Fried Cauliflower Rice:

  • 1)

    Heat sesame oil in nonstick skillet over medium-high heat. Add ground chicken to skillet, break apart with spatula until browned and fully cooked. Remove from pan and set aside.

    Reduce heat to medium, add in bagged cauliflower rice, minced garlic and seasonings. Cook until heated, about 5-7 minutes, stirring frequently. 

  • 3)

    Stir in soy sauce sauce and heat through for 1 minute. Add scrambled eggs and chicken to skillet. Heat through and serve. Garnish with sesame seeds and green onions, if desired.

Yum Yum Sauce:

  • 1)

    Whisk all ingredients together in a bowl until well combined. Cover and refrigerate for at least 1 hour before serving. Store in an air tight container for 7-10 days in refrigerator.
