I love one pan meals! They’re so easy to make and clean up is a breeze! I wanted something different for dinner last week, so I threw this skillet together. It turned out great, so I jotted down what I did and re-made it for the blog. If you love cheesy chicken meals, then this one will be a winner for you. It reminds me of a broccoli and rice chicken skillet that I made prior to starting keto, except without the carbs.
I kept the ingredients simple, but included things that made this skillet meal flavorful. You will need chicken breast, onion, garlic, frozen cauliflower rice, broccoli, broth, seasonings and some cheeses. I used a little cream cheese and grated parmesan, then topped the skillet with freshly shredded cheddar cheese. You can also garnish it with some parsley and red pepper flakes if you like. I served it immediately, but it was also great leftover for lunch the next day.
