Happy December everyone! December and January are going to be extra busy months for me, so I wasn’t sure if I would even get to share a blog recipe this month. However, I made this cheesy cauliflower rice the other day and knew that I wanted to get it on the blog after tasting it. I was craving mac and cheese and this definitely hit the spot!
As I am typing this, I realize that I’ve shared a lot of side recipes here recently. I like to have lots of side options during the holiday season. There’s always ham, turkey, roast or lamb, but side options that I can enjoy are usually limited if I want to stay on plan. If you need some side ideas, you can find several options here. Some of my holiday favorites include: Low Carb Cranberry Sauce, Keto Cornbread Dressing and the Loaded Cauliflower Bake.
I played around with the ingredients as I was developing this recipe, but kept it basic as usual. You will need: cauliflower rice, cream cheese, heavy cream, chives, seasonings and freshly shredded cheese. I’ve tried several low carb “pasta” substitutes in the past and honestly haven’t cared for any of them. Cauliflower rice was perfect for this recipe. It only takes a few minutes to make and really satisfies that mac and cheese craving. Enjoy!
