Keto Cheesy Buffalo Pork Chops

I’m almost 32 weeks pregnant! I can’t believe how fast this third trimester is going! I feel pretty good, but am starting to get uncomfortable. I am going to continue blogging as long as I can though. I was making our weekly dinner menu and decided I wanted to try something new with pork chops. I love buffalo flavored everything, so that’s what I went with. Ingredient wise, I kept it very simple and they take just a few minutes to prepare on the stovetop. I considered creating an Instant Pot or Crockpot recipe, but decided the stovetop sounded easier. I’ll definitely try those techniques in the future though. 

Like I said, this recipe couldn’t be any easier! I made a simple seasoning blend to season the pork chops with, then cooked them in some butter and buffalo wing sauce. Once they were completely cooked through, I brushed the pork chops with a little more buffalo sauce, topped them with some thinly sliced mozzarella cheese and placed them under the broiler. They turned out fantastic and my husband loved them as well! I also garnished them with some dried chives and served them with a side of ranch for dipping. 

I kept my sides simple and served them with green beans for myself and peas for my husband. They would also be great paired with my Low Carb Coleslaw, Roasted Broccoli, Air Fryer Green Beans or Cheesy Cauliflower Rice. So many yummy options! Keto Cheesy Buffalo Pork Chops

  • Prep time: 5 minutes
  • Cook time: 15 minutes

Ingredients

  • 5 boneless pork chops
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 Tbsp butter
  • 4-5 Tbsp buffalo wing sauce, divided
  • 5 slices mozzarella cheese, thinly sliced

Method

  • 1)

    Combine seasonings together in a small bowl. Season pork chops with seasoning mixture.

  • 2)

    Melt butter in a large, oven safe skillet over medium heat. Once butter is melted, add 3 Tbsp buffalo wing sauce and stir until combined.

  • 3)

    Add pork chops to skillet. Cook on both sides until browned and cooked through. Remove from heat and brush remaining 1-2 Tbsp of buffalo sauce on top of each pork chop. 

  • 4)

    Top with sliced mozzarella and place under broiler until cheese is melted, about 5-7 minutes. Garnish with chives, if desired.
