Keto Cheesy Bacon BBQ Chicken

I mentioned a few post back that chicken is my favorite food! I’m always trying to think of ways to create a new chicken recipe. This BBQ chicken turned out delicious and doesn’t get any easier. You just need four basic ingredients plus the seasoning mixture. I’ve really enjoyed making my own spice mixtures lately. Like I’ve said before, I know exactly what’s in them and can keep the ingredients clean. I have a homemade taco seasoning, fajita seasoning and blackened chicken tender spice blend here on the blog, just to name a few.

For this recipe you need chicken breast, bacon, your favorite sugar free BBQ sauce and shredded cheese. Like I said, super easy. I use the G. Hughes sugar free BBQ sauces. It’s the best out there, in my opinion. The seasoning blend only requires basic spices that I keep on hand in my pantry. What can you serve with the chicken? Coleslaw, salad, or your favorite low carb veggies are all good options. Since summer is right around the corner, I’ve had a craving for coleslaw. I’ve made it a lot lately since it pairs well with almost anything. Hope you enjoy!

Keto Cheesy Bacon BBQ Chicken

  • Prep time: 15 minutes
  • Cook time: 30 minutes
  • Serves: 3

Ingredients

  • 3 boneless, skinless chicken breast
  • 6 bacon slices, cooked & chopped
  • 4.5 Tbsp sugar free BBQ sauce, divided
  • 3/4 cup shredded cheddar cheese
  • BBQ seasoning blend, see recipe below

BBQ Seasoning Blend:

  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp thyme
  • 1/4 tsp salt
  • Pinch-1/8 tsp cayenne pepper

Method

  • 1)

    Cook and chop bacon, set aside.

  • 2)

    Preheat oven to 400 degrees. In a small bowl, mix together BBQ seasoning blend.

  • 3)

    Season chicken breast with seasoning mixture and bake for 20 minutes.

  • 4)

    Remove from oven and top each breast with 1.5 Tbsp BBQ sauce, shredded cheese and chopped bacon.

  • 5)

    Bake for an additional 10 minutes, until cheese is melted and chicken is cooked through.
