Keto Buffalo Chicken Meatballs

I love buffalo flavored everything! I decided to make these homemade buffalo chicken meatballs for dinner a few days ago and they turned out delicious! They make a fantastic appetizer as well! It won’t be long until people start planning their Super Bowl parties, so I wanted to get these on the blog as soon as possible.

I love creating meatball recipes and have several here on the blog. I have a classic homemade meatball bake, an enchilada meatball bake and a chicken parmesan meatball bake. All three are super yummy and easy to make. I’ve gotten a lot of positive feedback on them, too!  I also have a pizza meatball bake in my e-cookbook as well. 

For this recipe I used ground chicken, one egg, grated parmesan cheese, diced celery, chives, some basic seasonings and buffalo sauce. Ground chicken is pretty sticky to work with, so I usually wear gloves when I’m combining the meatball mixture. I used a cookie scoop to make even sized meatballs and then finished forming the meatballs with wet hands. I formed mine into 15 meatballs, but you can make them smaller if you prefer. I baked them on an aluminum foil baking sheet and tossed them in buffalo sauce when they were finished cooking. They’re so easy to make! You can serve them as an appetizer with a side of ranch or blue cheese. I like serving them with coleslaw or a side salad if I’m eating them as a meal. Enjoy!

Keto Buffalo Chicken Meatballs

  • Prep time: 10 minutes
  • Cook time: 20 minutes
  • Serves: 5 (Serving Size: 3 meatballs)
  • Calories 200.1

Ingredients

  • 1 lb ground chicken
  • 1 large egg
  • 1/2 cup grated parmesan cheese
  • 1 celery rib, finely diced
  • 1.5 Tbsp dried chives
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup buffalo sauce

Method

  • 1)

    Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil and spray with nonstick cooking spray.

  • 2)

    Add all ingredients (except for buffalo sauce) into a large bowl and mix until well combined. 

  • 3)

    Shape into 15-18 meatballs and place on prepared baking sheet. Bake for 20-25 minutes, until completely cooked through.

  • 4)

    Transfer cooked meatballs to a large bowl. Add buffalo sauce and toss to coat. Serve with ranch or blue cheese, if desired.
