Keto Berry Cheesecake Fluff

I’ve been making this cheesecake fluff since starting keto a few years ago. It’s so tasty and I love how easy it is to whip together! I’m not much of a sweets person, but do like to have a treat from time to time. Pregnancy cravings struck earlier this week and I wanted something sweet. I was going to make my Keto Mini Cheesecakes, but didn’t have a couple of the ingredients for those. I had everything on hand for this cheesecake fluff and decided to make it for the blog. I love anything cheesecake related and this makes the perfect, guilt free treat!

My version of cheesecake fluff uses heavy cream, vanilla extract, lemon extract, cream cheese and powdered erythritol. I also fold in some fresh berries. I always use strawberries and blueberries, but feel free to swap them out with your favorite berries. My husband likes adding some granola into his, so if you have some keto granola in your pantry, it makes a great topping option. Sometimes I will even add a ChocZero milk chocolate square to my bowl. I used a hand mixer to beat the heavy cream until medium peaks formed. Just be sure not to over beat! Also be sure that your cream cheese is softened to room temperature. Otherwise, the mixture will be lumpy. This cheesecake fluff only takes a few minutes to make and is the perfect summer treat! If you give it a try, I hope you enjoy it!

Keto Berry Cheesecake Fluff

  • Prep time: 10 minutes
  • Total time: 10 minutes
  • Serves: 4 (Serving Size: 1/2 cup)

Ingredients

  • 1/2 cup heavy cream
  • 1/2 tsp vanilla extract
  • 1/4 tsp lemon extract
  • 8 oz cream cheese, softened to room temperature
  • 1/4 cup powdered erythritol
  • 1/3 cup fresh strawberries, chopped
  • 1/4 cup fresh blueberries

Method

  • 1)

    In a medium bowl, beat heavy cream with vanilla extract and lemon extract until medium peaks form. Don’t overbeat. Set aside.

  • 2)

    In a separate, large bowl, beat softened cream cheese and erythritol together until smooth. 

  • 3)

    Fold whipped cream into cream cheese mixture and stir until smooth. Fold in berries. 

  • 4)

    Cover and refrigerate for at least 1 hour before serving. Garnish with extra berries, if desired.
