Keto Beef Queso Dip

Since it’s Super Bowl week, I knew I had to share an appetizer recipe with you all. It took me three tries, but I finally nailed the perfect queso recipe! I was planning out our menu for Super Bowl Sunday and my husband suggested queso. The only queso I’ve ever made uses Velveeta, so I decided to make my own. Once I got the measurements perfected, it was super simple to make and turned out SO good!

For low carb dippers I suggest using pork rinds, cucumber slices, celery sticks, bell pepper slices or cheese crisp. You can also make “chips” out of low carb tortilla or flatbreads. My Super Bowl menu will definitely include this queso, my Enchilada Soup and a simple Charcuterie Board. I have a Jalapeno Popper Dip that is delicious as well. I hope you love this dip as much as we did!

Keto Beef Queso Dip

  • 1/2 lb ground beef
  • 1 jalapeno pepper deseeded & chopped
  • 1/2 cup heavy whipping cream
  • 2 Tbsp water
  • 6 oz freshly shredded cheddar cheese
  • 4 oz freshly shredded pepper jack cheese
  • 2 oz cream cheese, softened
  • 1 cup diced tomatoes & green chiles, drained
  • 1/4 cup salsa


  • 1)

    Add ground beef to skillet and break meat apart with spatula. When beef starts to brown and is just slightly pink, add chopped jalapeno. Cook until pepper is soft and beef is cooked through. Drain excess grease, if any.

    In medium saucepan, add heavy whipping cream and water. Stir over medium heat until it begins to simmer.

    Add cream cheese and stir until fully melted.

  • 4)

    Once cream cheese is melted, gradually add shredded cheeses & stir until completely melted.

  • 5)

    When cheeses are melted, stir in salsa.

  • 6)

    Continue stirring for a couple of minutes, then add in diced tomatoes/green chiles and beef mixture.

    Heat through for 3-5 minutes and serve warm.
