I really wanted meatloaf a couple of days ago, but was completely out of sugar free ketchup. I have an Easy Keto Meatloaf recipe that is my go-to, but since I didn’t have ketchup, I couldn’t make it. I decided to take what I had on hand and make a BBQ Bacon version of that meatloaf. It turned out absolutely delicious! I’m not sure which version I like best, they both are so good and remind me of being back home in my mom’s kitchen in Kentucky.
Here’s what you need to make this meatloaf: Ground beef, sugar free BBQ sauce, worcestershire sauce, grated parmesan cheese, pork rind crumbs, onion, egg and some basic seasonings. I kept the topping simple and brushed on more BBQ sauce and some crumbled bacon. Everything’s better with bacon! I put the meat mixture into a loaf pan and then inverted it onto a baking sheet lined with aluminum foil. I always do it this way so it cooks more evenly.
I always get asked which sugar free BBQ sauce I use. I really wanted to make my homemade sauce that is going to be a part of my upcoming E-Cookbook, but again I was out of ketchup. My favorite bottled sauce is the G. Hughes brand. I get it at Walmart, but you can also find it on Amazon. There’s quite a few brands out there, but G. Hughes is my personal favorite. Homemade is always better, so I can’t wait to get my book finished so I can share the BBQ sauce recipe with you all!
Side options: I made green beans and coleslaw, but any low carb veggies would pair well with this meatloaf. You could serve it with brussel sprouts, asparagus, broccoli, roasted vegetables or even a side salad. My mom always served her meatloaf with the classic mashed potatoes, so a lot of times, I’ll make some mashed cauliflower to keep it low carb.
