I made this Air Fryer Chicken & Veggie meal for dinner last week. It turned out so good that I made it again for lunch a couple of days later to put on the blog. I love how easy meals are to make in the air fryer and I especially need easy meals right now. Everything always turns out so crispy and delicious, plus clean up is so easy! I threw together a simple seasoning mixture to coat the chicken and veggies with. I kept it simple and used broccoli florets, a red bell pepper and onion, but you can use whatever vegetable combination you like. Both zucchini and green beans would be a great addition. Once I got the chicken diced and the veggies chopped, I coated everything in a little olive oil and the seasoning mixture. It took around 14 minutes in my air fryer for the chicken to get done, but times will vary depending on your air fryer. The vegetables turned out so good too!
The good thing about this meal is you donโt really need sides. The first time I made it, I steamed some rice for my husband, but he agreed that no sides are necessary. I didnโt even serve it with sauce, but you could dip your chicken in sugar free BBQ sauce, ranch or your favorite condiment. If you give this easy recipe a try, I hope you enjoy it!
