Happy March! I made this Sausage, Pepper & Onion Skillet a few nights ago for dinner and it turned out so delicious! I shared it on Instagram and a couple of people reached out asking for a recipe. Even though it’s such a simple recipe, I had planned on re-making it for the blog anyway. I use my blog and e-cookbook to menu plan each week and didn’t want this skillet to get forgotten about.
For this skillet I used the Aidells brand of smoked sausage, one red bell pepper, one green bell pepper, onion, garlic and a couple of spices. It’s so simple to throw together and has great flavor! You could even throw in some diced tomatoes, zucchini or broccoli. A lot of people ask about smoked sausage brands when I made a post that includes them. I usually stick with the Aidell’s, Kiolbassa, Pederson’s or Trader Joe’s brands. They all have pretty clean ingredients and are 1-2 carbs per sausage link. I love the taste of all of them too.
As far as sides, I just served mine with steamed cauliflower rice. You could also serve it with cauli mash, broccoli, green beans or any other low carb veggie that you like.
