Enchiladas are one of my favorite foods! Thanks to low carb tortilla wraps, I’m still able to enjoy them. I use the flatbreads from Cutdacarb. You can use them to make quesadillas, burritos, pizzas or sandwich wraps. The ingredients are clean and they’re perfect for enchiladas! Mexican food is my favorite and I am so glad I’m able to still enjoy it while following keto.
This enchilada recipe is about as simple as it can get. It only uses five ingredients: shredded chicken, enchilada sauce, salsa, Mexican blend cheese and the wraps. Serve them with your favorite garnishes or cauliflower rice. Enjoy!
