Easy Low Carb Enchiladas

Enchiladas are one of my favorite foods! Thanks to low carb tortilla wraps, I’m still able to enjoy them. I use the flatbreads from Cutdacarb. You can use them to make quesadillas, burritos, pizzas or sandwich wraps. The ingredients are clean and they’re perfect for enchiladas! I have recipes here on the blog for taquitos, an enchilada casserole, taco casserole and several other Mexican inspired dishes that you can find here. Mexican food is my favorite and I am so glad I’m able to still enjoy it while following keto.

This enchilada recipe is about as simple as it can get. It only uses five ingredients: shredded chicken, enchilada sauce, salsa, Mexican blend cheese and the wraps. Serve them with your favorite garnishes or cauliflower rice. Enjoy!

Easy Low Carb Enchiladas

  • Prep time: 15 minutes
  • Cook time: 20 minutes
  • Serves: 5 (Serving Size: 1 enchilada)

Ingredients

  • 2.5 cups shredded chicken
  • 3/4 cup enchilada sauce
  • 1/4 cup salsa
  • 1 cup shredded Mexican blend cheese, divided
  • 5 low carb tortillas, I use Cutdacarb*

Method

  • 1)

    Cook & shred the chicken. I cook mine in the Instant Pot with chicken broth on manual/high pressure for 20 minutes. Manually release pressure and shred with 2 forks. You can also use a rotisserie chicken.

  • 2)

    Preheat oven to 350 degrees F. Spray a baking dish with nonstick cooking spray.

  • 3)

    Mix enchilada sauce and salsa together. Stir well and spread a thin layer onto bottom of baking dish.

  • 4)

    To assemble enchiladas: Spread 2 Tbsp of enchilada/salsa mixture onto bottom of each tortilla. Divide shredded chicken between each tortilla and sprinkle with cheese (about a Tbsp). Roll up and place seam side down into pan.

  • 5)

    Once assembled, spoon remaining sauce on top of tortillas and top with remaining shredded cheese.

    Cover with foil and bake for 20 minutes. Uncover and broil for 2 minutes, if needed. Serve with your favorite garnishes.

Notes

*I cut one Cutdacarb flatbread in half to make 2 tortillas.
