Keto Slow Cooker Salsa Chicken (3 Ingredients)

I’ve been making this salsa chicken for years! Before keto, I always used a recipe that required cream of chicken soup and a few other ingredients. When I started keto, I eliminated the cream of chicken soup to save on carbs and made a couple of other modifications. It’s just as good and is still one of my favorite meals! I always make it when I have family visiting and everyone always enjoys it. Plus, it’s a slow cooker recipe that only requires 3 simple ingredients!

I love slow cooker meals, especially easy ones that only require basic ingredients. All you need for this recipe is chicken breast, taco seasoning and salsa. It doesn’t get much easier than that! You simply let it cook for a few hours, shred it and serve. The chicken will just fall apart and is so flavorful. I also have a homemade taco seasoning recipe that you can find here. It has simple, clean ingredients and is so much better than the packaged ones.

I love using this salsa chicken in tacos, over cauliflower rice or just making a yummy burrito bowl with it. It pairs great with your favorite low carb tortillas or with lettuce wraps. I usually do a “make your own taco bar” when I make this and put all of our favorite toppings in little bowls. I always serve it with lettuce, sour cream, salsa, guacamole or avocado slices, jalapenos and shredded cheese. Cheese crisps, Quest tortilla protein chips and tomatoes are a great option as well! If you’ve never tried it before, add it to your dinner menu one week, you will love it!

Keto Slow Cooker Salsa Chicken

  • Prep time: 5 minutes
  • Cook time: 6 hours
  • Serves: 8

Ingredients

  • 3-4 boneless, skinless chicken breast (2 pounds)
  • 2 Tbsp taco seasoning
  • 1.5 cups salsa

Method

  • 1)

    Place chicken breast into bottom of slow cooker. Sprinkle with taco seasoning and top with salsa.

  • 2)

    Cover and cook on low for 6 hours or until chicken is cooked through and shreds easily.

  • 3)

    Remove chicken and shred with two forks. Add chicken back into slow cooker and stir to incorporate with remaining salsa and juices. Serve with your favorite garnishes.
