I’ve been making this salsa chicken for years! Before keto, I always used the recipe from Chef-In-Training. It’s a creamy version that uses cream of chicken soup. When I started keto, I eliminated the cream of chicken soup to save on carbs. It’s just as good and is still one of my favorite meals! My husband loves it too! I also made it when I was recently visiting my family in Kentucky and they enjoyed it as well!
I love crock-pot meals, especially easy ones that only require a few basic ingredients. All you need for this recipe is your slow cooker, chicken breast, taco seasoning and salsa. It doesn’t get much easier than that! When I shared my menu one week on Instagram, a few people messaged wanting to know how I make it. There are tons of salsa chicken variations out there, but I wanted to share how I make mine.
I love using this salsa chicken in tacos, over cauliflower rice or just making a yummy burrito bowl with it. It pairs great with your favorite low carb tortilla or with lettuce wraps. I usually do a make your own taco bar when I make this and put all of our favorite toppings in little bowls. If you’ve never tried it before, add it to your dinner menu one week, you will love it!
I also like making taco salad plates with the salsa chicken. This one includes: lettuce, cheese, sour cream, avocado, lime wedges, jalapeno slices and some Quest Nutrition tortilla protein chips that I ordered off of Amazon. So yummy! If you give it a try, I hope you enjoy!
