Keto Crock-Pot Salsa Chicken

I’ve been making this salsa chicken for years! Before keto, I always used the recipe from Chef-In-Training. It’s a creamy version that uses cream of chicken soup. When I started keto, I eliminated the cream of chicken soup to save on carbs. It’s just as good and is still one of my favorite meals! My husband loves it too! I also made it when I was recently visiting my family in Kentucky and they enjoyed it as well!

I love crock-pot meals, especially easy ones that only require a few basic ingredients. All you need for this recipe is your slow cooker, chicken breast, taco seasoning and salsa. It doesn’t get much easier than that! When I shared my menu one week on Instagram, a few people messaged wanting to know how I make it. There are tons of salsa chicken variations out there, but I wanted to share how I make mine.

I love using this salsa chicken in tacos, over cauliflower rice or just making a yummy burrito bowl with it. It pairs great with your favorite low carb tortilla or with lettuce wraps. I usually do a make your own taco bar when I make this and put all of our favorite toppings in little bowls. If you’ve never tried it before, add it to your dinner menu one week, you will love it!

Keto Crock-Pot Salsa Chicken

  • Prep time: 5 minutes
  • Cook time: 6 hours
  • Serves: 8
  • Calories 138

Ingredients

  • 3-4 boneless, skinless chicken breast (2 pounds)
  • 1.5 cups salsa
  • 2 Tbsp taco seasoning

Method

  • 1)

    Place chicken breast into bottom of crock-pot. Sprinkle with taco seasoning and top with salsa.

  • 2)

    Cover and cook on low for 6 hours or until chicken is cooked through and shreds easily.

  • 3)

    Remove chicken from crock-pot and shred with two forks.

  • 4)

    Add chicken back into crock-pot and stir to incorporate with remaining salsa and juices. Serve with your favorite garnishes.
