Creamy Low Carb Coleslaw

I used to make coleslaw all the time before starting keto. It’s one of my favorite side options, especially in the summertime. Prior to keto, I never made homemade dressing and just used the Hidden Valley brand in the bottle. It tastes good, but has junk ingredients. Shortly after starting keto, I started making this homemade dressing. I promise it tastes better than the bottled stuff and uses simple, clean ingredients.

I’ve had it written down in my recipe notebook for months. I didn’t plan on sharing it here on the blog though. I’m going to be working on an e-cookbook shortly and wanted to include my coleslaw recipe in the book. I’ve had so many people ask for the recipe on Instagram and decided I would share it on here since it’s a great recipe to make in the summer. It pairs great with almost anything and is a great dish to take to a potluck or cook out. I like serving it with chicken, burgers, pulled pork or even on top of hotdogs.

Ingredient wise you just need mayo, vinegar, lemon juice, sweetener and some seasonings. Simply whisk everything together and pour over your coleslaw mix. I recommend refrigerating it for at least an hour before serving. My husband and I love it and I hope you do too. Enjoy!

Creamy Low Carb Coleslaw

Ingredients

  • 14 oz bag coleslaw mix
  • 1/2 cup mayo
  • 1 Tbsp white vinegar
  • 1 Tbsp lemon juice
  • 1.5 tsp powdered sweetener, I use Swerve
  • 1/2 tsp celery seed
  • 1/4 tsp black pepper
  • Large pinch of salt

Method

  • 1)

    In a medium bowl, whisk together all coleslaw dressing ingredients until smooth. Pour over coleslaw mix. Refrigerate and toss before serving.
