Chicken Fried Cauliflower Rice

When I started keto, I never thought I would get to have fried rice again. That was until I found the Green Giant Cauliflower Rice Medley. I always follow the recipe on the back of the bag and make just a few modifications to suit my taste. My husband isn’t keto and loves this recipe. Honestly, you can’t even tell a difference from “regular” fried rice!

It’s probably one of the easiest recipe on my blog, but is full of flavor! It’s perfect for those busy nights during the week when you need something quick and is great re-heated the next day for lunch. I hope you enjoy!

Chicken Fried Cauliflower Rice

  • Prep time: 5 minutes
  • Cook time: 15 minutes
  • Serves: 4

Ingredients

  • 2 Tbsp sesame oil, divided
  • 1/2 lb ground chicken
  • 2 garlic cloves, minced
  • 1 bag Green Giant Cauliflower Rice Medley
  • 1/4 tsp ground ginger
  • Seasoning salt, to taste
  • 2 Tbsp soy sauce
  • 2 eggs, scrambled

Method

  • 1)

    Heat 1 Tbsp of oil in non-stick skillet over med-high heat. Add ground chicken, break apart with spatula until browned and fully cooked. Remove from pan and set aside.

  • 2)

    Reduce heat to medium. Add 1 Tbsp more of oil and saute garlic for 1 minute. Add in bagged cauliflower rice and spices. Cook for 5-7 minutes, stirring frequently.

  • 3)

    Add in soy sauce and cook for 1 minute. Stir in scrambled eggs and chicken. Heat through for 1 minute and serve.
