Welcome!

I’m Laura! Welcome to my blog! I currently live in North Carolina, but was born and raised in Kentucky. I live with my husband, Viddi and our cat, Jessie. I have been living a low carb/ketogenic lifestyle since January 2017. I love creating new recipes and finding ways to make low carb versions of my favorite meals! I’ve been sharing my journey on Instagram and decided to create this blog so I can share even more. Feel free to follow along and contact me with any questions you may have!

One of the most frequently asked questions I get asked is “why I started keto?” I knew that I needed to lose weight, but had some health issues that needed attention as well. I had high cholesterol and triglycerides, high blood pressure and my glucose levels were creeping up on me. It was also revealed on an imaging study that I had a fatty liver.

76 pounds later, ALL of my lab work is completely normal and my last imaging study showed no evidence of fatty liver disease. My blood pressure is normalized as well. I take no medications and went from living a very sedentary lifestyle to working out everyday. I enjoy cycling and going to the gym with my husband. Keto has changed my life in so many ways and I am excited to continue sharing my journey with you!

1. When did you start keto?

2. Do you track macros or count calories?

No, I only track net carbs. I keep those at 20-25g or less per day.

3. Do you Intermittent Fast?

Yes. I usually follow a 16:8, but I always listen to my body and eat when I am hungry. Fasting is very individualized, so it’s best to do your own research to have a full understanding.

4. Do you work out?

When I first started, I walked around the neighborhood and set a goal to hit 10k steps a day, 6 days a week. I now cycle along with going to the gym.

5. Do you use an app to track?

I track everything I eat by hand. A lot of people use the My Fitness Pal app.

6. What do you use to test your ketones?

The Keto Mojo meter.

7. How did you get started?

I put in the time and researched. I read a lot on Google, Reddit and watched YouTube videos.

I recommend “The Keto Diet” book by LeeAnne Vogel, healthfulpursuit.com, Dr. Eric Berg’s YouTube page, and Keto Connect’s YouTube page. Ruled.me also has tons of great information. If you are looking for cookbooks my favorites are “Craveable Keto”, “Simply Keto” and “Keto Made Easy.” I purchased all three of these from Amazon.

8. What’s your number one recommendation for someone just starting keto?

To keep it as simple as possible. When first started, I stuck to the basics: bacon, eggs, meats, cheese and low carb veggies. It wasn’t until later in my journey that I started incorporating low carb treats. I have also meal planned from the very beginning. Hydration is very important. Definitely read up on “keto and electrolytes” to avoid the keto flu. My go-to’s are Zipfizz, Go Ultima Electrolyte powder or simply just adding salt to my water or bone broth.
